Ingredients

1 Onion (chopped)

5 Cloves Garlic (minced)

4 tbsp Olive Oil

1 tbsp Balsamic Vinegar

1 tsp Mesquite Liquid Smoke

1/4 cup BBQ Sauce (optional)

2 cans Black Beans (rinsed well)

2 4oz cans Diced Green Chilies

2 15oz cans Dices Tomatoes

1 cup Vegetable Stock (or chicken stock, base, broth, etc)

1 cup Corn (frozen or fresh)

5 tbsp Chili Powder

3 tbsp Ground Cumin

1 tsp Paprika Powder

1 Jalepeño (optional to make spicy)

1/4 bunch chopped Cilantro

Masa Harina (optional)

Shredded Cheese

Sliced Lime

Greek Yogurt (plain) or Sour Cream

(Grilled chicken or ground meat can be added if desired)

Preparation

Sauté onion and garlic in olive oil until caramelized (5 min or so). Add balsamic vinegar and liquid smoke and stir 1 min. Add black beans, green chilies, BBQ sauce, tomatoes, vegetable stock, corn, spices, and jalapeño and bring to a boil. Simmer for 15+ minutes. Masa Harina can be added for desired thickness. Stir in cilantro. Garnish with cheese, lime and yogurt or sour cream.
