Ingredients

3 packages of cherry tomatoes

1/2 cup good extra virgin olive oil

3 cloves crushed fresh garlic (cloves NOT whole heads!)

1 bunch basil (remove leaves, stack and roll them like a cigar then finely chop)

1/2 small jar sundried tomatoes (+ half the oil from the jar)

1/2 teaspoon salt

1 teaspoon pepper

Preparation

  1. Spread tomatoes evenly on bottom of dish (DO NOT layer!).
  2. Pierce each tomatoe with end of knife.
  3. Add all ingredients and mix well with hands to ensure even distribution/coating over tomatoes.

Bake @ 375 degrees (on convection setting if possible) in pre-heated oven for approximately 45 minutes or until tomatoes appear SLIGHTLY charred.

Let cool and serve with sliced fresh bagette.
