Ingredients
3 packages of cherry tomatoes
1/2 cup good extra virgin olive oil
3 cloves crushed fresh garlic (cloves NOT whole heads!)
1 bunch basil (remove leaves, stack and roll them like a cigar then finely chop)
1/2 small jar sundried tomatoes (+ half the oil from the jar)
1/2 teaspoon salt
1 teaspoon pepper
Preparation
- Spread tomatoes evenly on bottom of dish (DO NOT layer!).
- Pierce each tomatoe with end of knife.
- Add all ingredients and mix well with hands to ensure even distribution/coating over tomatoes.
Bake @ 375 degrees (on convection setting if possible) in pre-heated oven for approximately 45 minutes or until tomatoes appear SLIGHTLY charred.
Let cool and serve with sliced fresh bagette.
