Ingredients

1/2 cup Olive’s Oil Basil Olive Oil

2-1/2 tblsp Olive’s Oil Sicilian Lemon Balsamic Vinegar

1/4 tsp fresh dill, chopped

1 tblsp Dijon mustard

1/2 tsp salt

1/2 tsp pepper

6 cooked red potatoes, diced

1 lb green beans

Preparation

Blanch green beans in salted water for 5 minutes, drain.

Shock in ice water so they stay bright green & crisp.

Whisk together the oil, vinegar, dill, Dijon mustard & salt/pepper - set aside.

Mix potatoes & green beans together then add the dressing - toss gently to coat. Serve chilled or at room temperature.
