Ingredients

1 cup chopped Natural Almonds

1/4 cup + 1 tablespoon olive oil, divided

1/4 cup mayonnaise

2 tablespoons lime juice or to taste

1 teaspoon salt

1/4 teaspoon white pepper

1/4 teaspoon sugar

1/4 teaspoon cumin or to taste

1 1/2 pounds small, red new potatoes, steamed and sliced

1/2 cup sliced green onions

1/2 cup julienned red bell pepper

1/2 cup julienned celery

1 tablespoon chopped fresh cilantro

Preparation

Sauté almonds in 1 tablespoon oil until crisp; reserve. Combine mayonnaise and next 5 ingredients. Gradually beat in remaining 1/4 cup oil. Gently toss with potatoes. Fold in green onion, bell pepper, celery and cilantro. Chill. Just before serving, fold in almonds.
