Ingredients

1 cup butter, softened

1 cup sugar

1 cup brown sugar

2 eggs

1 tsp vanilla

2-1/2 cups oatmeal (put in blender or processor and grind to flour)

1/2 tsp salt

1 tsp baking powder

1 tsp baking soda

2 cups flour

12 oz semi sweet choc chips (or combo of chips)

1 cup chopped nuts (optional)

Preparation

In a bowl, cream butter and sugars with mixer. Blend in eggs and vanilla. Add powdered oatmeal and mix. Add the salt, baking powder, baking soda and flour. With a big spoon add the chips. Place golf ball (TBS) size pieces of dough 2" apart on ungreased cookie sheets.

Bake at 375 for 9 to 10 minutes. Do not overbake - this is a soft cookie and will harden slightly when cooled.
