Ingredients

1/2 pound ground lamb

1/2 pound ground pork

1/2 pound ground buffalo

1 cup fresh bread crumbs (potato bread)

1/2 cup italian seasoned bread crumbs

2 tablespoons chopped fresh basil

2 tablespoons fresh chopped garlic

1/2 cup grated parm cheese

2 teaspoons kosher salt

1/2 teaspoon fresh ground pepper

1/4 teaspoon nutmeg

1 extra large egg beaten

Vegetable oil

Olive oil

Preparation

Place the ground meats, both bread crumbs, basil, parmesan, salt, pepper, nutmeg, egg and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2 inch meatballs. Pour equal ammounts of vegetable oil and olive oil into a pan until 1/4 inch deep, heat on medium low heat. place meatballs a few at a time and cook on all sides until nicely browned. transfer to oven or sauce to continue cooking until cooked through. 375 at 15 minutes.
