Ingredients

1 C cake flour

1 1/2 C powdered sugar

1 1/2 C egg whites (12-13 eggs)

1/3 t salt

1/2 t almond extract

1 1/2 t clear vanilla extract

1 1/2 t cream of tartar

1 C granulated sugar

Preparation

  1. Sift cake flour and powdered sugar together.
  2. Beat egg whites until foamy.
  3. Gradually add 1 C granulated sugar until stiff peaks form.
  4. Fold flour mixture.
  5. Spoon into ungreased pan.
  6. Bake 350 for 35-45 min. (Tend to overbake if not sure.)
  7. Immediately invert on a wine bottle. Cool.
