Ingredients
2 cloves garlic
1 tblsp cumin
1 Tblsp chili powder
1 tblsp paprika
1 onion
1 tblsp oregano
salt
pepper
1/3 cup brown sugar
cayenne
bacon
thyme
olive oil
1/4 cup molasses
1 cup peach preserves
3 tblsp red wine vinegar.
Preparation
make rub with dry ingredients. Rub on ribs. Cover with foil and seal. Place on cookie sheets and bake @350 for 1 1/2 hours.
fry 2 slices bacon in olive oil with fresh thyme add garlic and onion and sauté in bacon grease add 2 cups catsup, peach preserves, molasses, brown sugar, paprika, cumin.
At 1 1/2 hours, check ribs for tenderness. If coming off the bone, coat both sides with sauce and cover for another hour. Open foil for last 1/2 hour. Finish on the grill.
