Ingredients

1 tablespoon butter

5 ripe hot peppers, preferably Dancing Spirits

4 cups chopped apple

apple cider (at least 2 cups)

2 tablespoons apple cider vinegar

2 tablespoons rice vinegar

1/2 teaspoon cinnamon

1/2 teaspoon allspice

1/4 teaspoon cloves

1/4 teaspoon ginger

1 box pectin

4 cups white sugar

1 cup brown sugar

Preparation

Melt butter in a wide, deep, non-reactive kettle over medium heat. Add peppers and saute slowly until softening, about 3 minutes. Meanwhile take the four cups of apples and pour in cider to the same level as the apples. When peppers are softened, add apples & cider, vinegar, spices, and pectin, stir thoroughly. Crank heat up to high, bring to a boil. Stir in sugars, bring back to a full, rolling boil, stirring constantly, for one minute. Remove from heat, place in jars and process as desired.
