Ingredients

1/2 cup vegetable oil

1/4 cup sugar

1 egg

1/2 cup unsweetened applesauce

1 teaspoon vanilla extract

1/2 cup whole wheat flour

1/2 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 cup quick-cooking oats, uncooked

1/2 cup currants

1 teaspoon ground allspice

Vegetable cooking spray

Preparation

  1. Combine oil and sugar in a medium bowl. Add egg, and beat at medium speed of an electric mixer until fluffy. Add applesauce and vanilla, stirring well.

  2. Combine whole wheat flour and next 6 ingredients; add to oil mixture, stirring well. Cover and chill at least 15 minutes.

  3. Drop dough by heaping teaspoonfuls onto baking sheets coated with cooking spray . Bake at 375 degrees for 10 minutes. Remove from baking sheets, and let cool on wire racks.
