Ingredients

Baguette, sliced into 1/4" slices

Olive oil

Coarse salt & ground pepper

6 1/2-oz jar of marinated artichoke hearts, drained

1/4c shredded Parmesan cheese, + more for garnish

1T chopped fresh parsley

Preparation

Preheat oven to 350.

Make crostini – Brush baguette slices on both sides with olive oil and season with s&p. Bake on baking sheet, turning over once, until golden – about 6-8 minutes. Allow to cool.

Make topping – Chop artichokes finely, and combine in a bowl with Parmesan, parsley and olive oil - a nice chunky paste. Spoon onto crostini. Garnish with additional Parmesan.
