Ingredients
1 pkg (6-7 oz) chicken-flavored rice (not Rice-a-roni)
2 green onions, sliced thin
1/2 chopped green pepper
1/2 tsp curry powder
8 sliced stuffed green olives
2-6 oz jars marinated artichoke hearts
1/3 C mayonnaise
Tomato and lettuce for garnish
Preparation
Cook rice per directions, but omit butter Cool rice. Add onions, pepper, olives to rice. Drain artichokes, reserving marinade. Slice artichokes and add to rice. Combine marinade and curry, and add mayo slowly until right texture. (May not need all mayo.0 Blend well. Add to rice. Toss and cover. Chill. May need to add a bit more mayo as it chills. Garnish with tomato and lettuce.
