Ingredients

1 and 1/3 cups fresh or frozen corn kernels

1 avocado

1/2 cup chopped red onion

juice of 1 lemon

2 tablespoons of fresh mint

salt and pepper to taste

Preparation

Cut avocado into a large dice. Defrost frozen corn for 2 minutes or shuck enough fresh cooked corn for 1 and 1/3 cups. Chop up red onion into semi-small dice. Combine all ingredients and season with salt and pepper to taste.
