HOW EVER MANY EGGS WILL FILL ALL OF THE POTATO NEST

Preparation

  1. BAKE 8 WHOLE POTATOES FOR ABOUT 45 MINUTES AND LET COOL

  2. PEEL POTATOES AND SHRED

  3. SEASON WITH SALT AND PEPPER

  4. TAKE MUFFIN PAN AND SPRAY WITH COOKING SPRAY

  5. MASH DOWN INTO EACH CUP AND ALL AROUND THE SIDES WITH ABOUT 4 TBSP OF POTATO MIXTURE AND SPRAY LIGHTLY WITH SPRAY.

  6. COOK AT 450 DEGREE OVEN FOR ABOUT 15-20 MINUTES.

  7. LET COOL AND CRACK IN THE EGGS AND DROP INTO EACH CUP AND SPRINKLE WITH SALT AND PEPPER AND BAKE AT 400 DEGREES FOR 10 MINUTES. ADD CHEESE IF YOU WOULD LIKE.
