Ingredients

1/3 cup olive oil

2 large onions, thinly sliced

3 anchovy filets, finely chopped

3 cloves garlic, finely chopped

2 pounds fresh roma tomatoes, sliced in 1/4 inch rounds

salt and pepper

1 pound thick fish cut into 4 servings 3/4 inch thick

4 oz sea scallops

4 oz prawns

2 T chopped fresh parsley

Preparation

Pre heat oven to 350 F Heat 1/4 c olive oil in large skillet over medium heat Add onion and sauté, stirring, until it begins to colour - about 6 min Add anchovies and garlic and stir and sauté about 1 min Spread half the onions on an oiled bake dish. Top with tomato slices. Salt and pepper. Place fish on top in one layer. Top with rest of onions and then tomatoes. Sprinkle with parsley. Bake 30 min.
