Ingredients

2T fresh lemon juice

1 lb large shrimp

2 tsp olive oil

1 c chopped onion

2 garlic cloves mince

4 T clam juice

2 T white wine

1 tsp dried oregano

Black pepper

2 14.5 oz cans diced tomatoes drained

1 cup feta crunbled

4 T chopped flat leaf parsley

Preheat oven to 450

Combine lemon and shrimp in a bowl. Heat oil in pan and add onion saute then add garlic then add clam juice wine oregano pepper and tomatoes Bring to boil reduce heat and simmer 5 min then stir shrimp mixture. Place in an 11x7 inch baking dish coated w cooking spray. Sprinkle w cheese and put in oven for 12 min till cheese melts and shrimp r done. Sprinkle w parsley

Orzo w herbs

Cook 1 1/2 c orzo pasta according to directions Drain and toss w 1/3 c chopped fresh basil 3T chopped fresh parsley 1 1/2 T olive oil 1/2 tsp salt and ground pepper
