Ingredients
2 lb. boneless pork loin
2 Tbls. chopped fresh rosemary
2 Tbls. steak seasoning rub
1/2 c. balsamico (or good brand vinegar)
1/2 c. olive oil
Preparation
Dissolve steak seasoning in balsamico. Stir in olive oil. Place pork in thick plastic bag. Pour marinade over it. Squeeze out air and seal bag. Marinate overnight (minimum 3 hours), but the longer the better. Place all in glass baking dish with oven at 350. Baste occasionally until internal temp is 145. About 50-60 min. Marinade may smell like it’s burning. It’s not. Let rest 10 min. before serving.
