Ingredients
9 ripe bananas
9 oz. vegetable oil
1 1/2 c sugar
3 eggs
3 tsp vanilla
4 1/2 c flour
3 tsp baking soda
3 tsp (heaping) baking powder
1 tsp salt
1 c chocolate chips
Preparation
Process the bananas, add oil, sugar, eggs, vanilla and beat thoroughly. Pour into large bowl. Sift and then add dry ingredients. Add chips and stir. Fill muffin cups to the top and bake for 20 to 25 minutes at 350 degrees. (spray muffin pan with PAM) Cool on a rack. Freezes really well. Makes about 2 dozen large muffins.
