3 really ripe bananas +1 fresh

1/3 cup melted butter

10 Mejool dates

1 egg, beaten

1 tablespoon vanilla

1 teaspoon baking soda

1/2 teaspoon salt

1 1/4 cups of all-purpose flour

Preparation

Preheat the oven to 350°F (175°C). In food processor -mix butter, bananas and dates, add egg, vanilla and baking soda. Add the flour last, mix. Pour mixture into 2 buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
