Ingredients

1 lb Tomotillos

2-3 Peppers to taste ( 1 Poblano, 1 Green, 1 Anaheim for ex.)

1 cup or up to a bunch of Cilantro

1/2 Squeezed lime

1 or more Jalapeños for heat

1/2 Mango

1 tsp of Ground Cumin

1/2 tsp of Ground Coriander

1 tsp of Salt

Preparation

First quarter the tomatillos and begin frying them with a table spoon of any nut oil. After 3 minutes add the mango and peppers(sliced into loops). Let them all cook together until the tomatillos begin to look somewhat transparent. After they are all cooked allow to cool slightly.

While still quite warm, to ensure a smooth sauce, pour into food processor or blender and blend until smooth. After the mix is processed pour in chopped cilantro, cumin, salt and coriander. Further process until cilantro and spices are mixed in. If the sauce is too watery it can be put back into the original frying pan to boil off some of the water

The sauce is now warm and ready to serve! Enjoy!
