Ingredients

2 tablespoons olive oil

1 each yellow onion, diced

3 cloves garlic, minced

1 pound prawns, peeled and deveined

1/4 cup Sauvignon Blanc

1 tablespoon lemon juice

5 each Roma tomato, peeled and diced

1/4 cup fresh basil, chopped

2 tablespoons fresh parsley, chopped

1 pinch red pepper flakes

1/2 cup feta cheese, crumbled

12 ounces linguine, cooked al dente

Preparation

  1. Heat olive oil in a skillet over medium-high heat. Briskly saute onion until softened, about 3 minutes.

  2. Add garlic and prawns and saute just until prawns turn a bright orange color, about 5 minutes.

  3. Add wine, lemon juice, and diced tomatoes, mixing thoroughly. When tomatoes have softened, add basil, parsley, and red pepper flakes. Cook for 2 minutes, then fold in the feta cheese. Heat until cheese has softened.

  4. Serve over prepared lingunie.
