Ingredients
1 cup Basmati Rice
1 1/2 Cup Chicken broth
1 medium lemon - make zest and squeeze for juice
1/4 onion finely chopped
Extra virgin olive oil
1/2 tsp minced garlic
small handful crumbled bacon
1 - 2 tsp sweet mesquite seasoning

Preparation
Extra virgin olive oil in bottom of pan. Add chopped onion and minced garlic. Cook until onions are getting clear.
Add the lemon zest and juice then add the rice. Stir well to heat the rice and give the flavor of the onion, garlic and lemon.
Add the chicken broth and bring to a vigorous boil. Reduce heat, cover and simmer for 12 - 14 minutes.
Remove from heat. stir in generous amount of Molly McButter. cover and let stand 5-10 minutes. Uncover, fluff with a fork, and serve
