Ingredients
3/4 cup vegetable oil
3 Cups minced onion
1 1/2 Cup minced green pepper
3 Jalepeno peppers
3 pinches salt
3 pinches black pepper
6 Tbsp garlic
1 (84 oz can) Tomato sauce
6 Cups ketchup
3 cups water
1/4 cup Worcestershire sauce
1 1/2 cup cider vinegar
3/4 cup lemon juice
3/4 cup molasses
3/4 cup spicy brown mustard
3/4 cup cayenne pepper sauce
2 1/4 cup dark brown sugar
3 tbsp chili powder
6 tsp ground black pepper
1 1/2 tsp allspice
3 tbsp liquid smoke
Preparation
- Sauté The vegetables in oil, add pinches of salt and pepper, add garlic last, sauté until golden brown.
- Add all liquid ingredients and stir together.
- Add all seasoning to finish sauce.
- Bring pot to boil then put it on simmer and let it simmer for about an hour to boil it down.
- When at the proper consistency, do a final check for flavoring and seasoning before bottling. ( adjustment of seasoning is usually required)
