Ingredients

1 tsp. olive oil

1/2 onion, chopped fine

2 cloves of garlic, mashed

1 cup white rice

2 cups vegetable or chicken broth

1 can black beans

1 cup corn (frozen or fresh)

2 Tbs. red salsa

2 Tbs. cilantro, chopped

1 chopped tomato (optional)

Preparation

Cook one cup rice in two cups of broth according to package directions. When done, put in a bowl and cover to keep warm.

Heat olive oil and saute onion and garlic until golden (a few minutes), add corn and beans to heat through (another 2-3 minutes). Add to rice with salsa and mix. Toss in cilantro and serve with lime wedges.
