Ingredients
2# ox tails
1 can chopped tomatoes or tomato paste
4 karge carrots
green pepper
1 onion, chopped
6 stalks of celery with leaves
Okra
1/4 to 1/3 cup of barley
Dumplings. 2 eggs, flour, nutmeg and salt
Preparation
Cook Tails 1 hour with salt & pepper. Skim of crud. Add onion, celery and tomatoes. Cook 1 1/2 to 2 hours Add carrots, green pepper and okra. Cook about a hour and then remove tails. Remove meat and add to soup. Add barley and cook 30to 60 minutes.
Make dumplings: beat eggs; add flour to doughy stage; add dash of nutmeg. Drop into soup and cook about 30 minutes.
