Ingredients

400g Eye fillet steak

25g butter

1/2 onion thinly sliced

3/4 tbsp paprika combo hot/sweet

150g button mushrooms halved or quartered

1.5 tbsp olive oil

150ml sour cream

salt and pepper

jucie 1/4 lemon

fresh parseley chopped

Preparation

slice beef 1cm strips

melt butter in heavy based pan on medium heat fry onion until soft add paprika and cook couple of minutes, don’t let onion brown

add mushrooms amd cook further 3-5 mins remove contents and set aside if pan dry, deglaze with dash of cognac or stock

season beef with salt & pepper return pan to heat add half olive oil and cook beef in 2-3 batches to seal and caramelise, not stew

remove beef and set aside

return mushroom and onion mix to pan, pour in sour cream, bring to boil and simmer for a minute until starts to reduce

return steak to pan with lemon juice and some parseley

server on bed of tagliatelle
