Ingredients

1 (15-ounce) can Great Northern beans, rinsed and drained

1(15-ounce) can black beans, rinsed and drained

1 1/4 cups peeled, seeded, and chopped tomato

3/4 cup diced sweet red pepper

3/4 diced sweet yellow pepper

3/4 cup thinly sliced green onions

1/2 salsa

1/4 cup red wine vinegar

2 Tablespoon chopped fresh cilantro

1/4 teaspoon salt

1/8 teaspoon freshly ground pepper

1 head, finely shredded romaine lettuce

Preparation

  1. Combine beans and chopped tomato in a large bowl, tossing gently.Add red pepper, yellow pepper, and green onions, tossing to combine.

  2. Combine salsa and next 4 ingredients; stir with a wire whisk until well blended. Pour over bean mixture, and toss gently.

  3. Line a large serving bowl with shredded lettuce; top with bean mixture.
