Ingredients
1 can black beans, drained and rinsed
1 cup chopped onion
2 cloves garlic
1/2 cup green bell pepper
2 chili peppers
1/4 cup chopped cilantro
1 cup chopped carrots
1 cup chopped potato
1 tbsp. chili garlic sauce
1 tsp ground cayenne pepper
1 tsp ground cumin
1 tsp salt
black pepper to taste
1 tbsp. corn starch
1/4 cup dry bread crumbs
Preparation
- Boil the carrots and potato until cooked and roughly mash.
- Place the onion, garlic, bell pepper, chili pepper, and cilantro in a food processor and chop fine.
- Add black beans to the food processor and purse until coarsely chopped.
- Place all ingredients into a large bowl. Combine well.
- Form into 6 patties. At this point, patties can be frozen on wax paper on a cookie sheet then bagged when completely frozen.
- Fry patties in a non-stick pan with a spray of Pam. Allow them to cook for several minutes on one side to completely brown it before flipping. Patties can be fried from frozen, partially frozen, or thawed - adjust cooking temperature and time accordingly.
