Ingredients
1 tablespoon butter
1 lb ground lean beef
1 onion chopped
2 cans (15 oz each) black beans, rinsed and drained
1 can (16 oz.) tomato sauce
1 jar (11.5 oz) chunky style medium -hot salsa
1 tablespoon cumin
1 tablespoon chili powder
1 cup shredded hot pepper Monterey jack cheese, divided
Preparation
In a large pot over medium heat, melt butter. Add onion and beef, cook, stirring frequently, until brown, about 5 minutes. Stir in next 5 ingredients; reduce heat and simmer about 15 minutes. Remove from heat; stir in ¾ cup of cheese until melted. Serve immediately, sprinkle with remaining cheese.
