Ingredients
2 20-oz cans black beans, drained & rinsed
3 scallions, chopped
1 jalapeno pepper, seeded & minced
1/2 C monterey jack cheese
2 T corn or olive oil
ground pepper to taste
1 C fresh corn or thawed frozen corn
1 4-oz can chopped mild green chilis
2 T chopped cilantro
Juice of 1/2 lime
3/4 tsp ground cumin
Preparation
- Combine beans, corn, scallions, chilis, jalapeno, cilantro and cheese in bowl.
- Whisk together lime juice, oil and cumin. Pour over bean mixture and mix well. Season to taste with pepper.
- Serve at room temperature or chill and allow flavors to blend. Good served in taco shells or soft tortillas too.
