Ingredients
1 cup Quinoa cooked
2 cups chicken broth
1 fifteen ounce can black beans drained and rinsed
2 cups roasted corn kernels
1 avocado cut into 1/2 inch pieces
1 pint grape tomatoes, halved
1/2 cup diced red onion
1/2 bunch cilantro diced
Zest of 2 limes
Salt and Pepper to taste

Preparation
- Cook quinoa with broth per directions
- Combine beans, corn and onion with salad dressing.
- When quinoa is finished, mound on serving plate. Top with bean mixture, grape tomatoes, avocado, chopped cilantro and lime zest.
- Let guests serve themselves and add salt and pepper to taste.
