Preparation

set 3 cups of black beans to boils with 4 tbls spoons of rendered pork fat, 5 minced garlics, salt to taste. Boil for about 2.5 hours. Drain when done set beans aside. salsa: roast 4 to5 whole jalapeños then chop to desired size Chop 1half purple onion into small pieces chop 2 hand full of cilantro dice 8 large roma tomatoes to medium size Add all above ingredients including beans into large bowl Squeeze juice of 3 to 4 limes add olive oil 6 to 7 tables spoons salt and pepper to taste mix and chill then serve with chips.
