Ingredients

1 can black beans (drained and rinsed)

1 can pineapple juice

1 bell pepper (i like orange)

1 tomato (or 1 heaping tablespoon ketchup)

2 scallions, chopped

1 lime (squeezed for juice)

2 cloves garlic

1 tsp salt

1 tsp cinnamon

1/2 tsp black pepper

1/2 cup cilantro, chopped fine (firmly packed)

Preparation

Mix everything together in a bowl except cilantro.

Simmer in a pot until most liquid cooked down (~45 mins)

Add cilantro and enjoy
