Ingredients

BEANS

1 pound black beans

1 each ham hock, optional

1 each onion, chopped

1 each green pepper, chopped

3 cloves garlic, crushed

1 tablespoon olive oil

bay leaf

1 tablespoon vinegar

RICE

1 cup rice

saffron or curry

dash chili powder

1 pound ground beef

dash crushed red pepper

salt and pepper

Cheese, grated

Preparation

  1. BEANS (Day before)

  2. Rinse beans. Soak in cold water overnight; drain. Cover beans with fresh water; add ham hock. Saute onions and green pepper in oil. Add to beans along with garlic, bay leaf, salt and olive oil. Cook all day. Stir in vinegar before serving.

  3. Season rice water with salt, saffron and chili powder. Cook rice according to directions.

  4. Brown ground beef. Season.

  5. Serve with grated chees
