Ingredients

Four 6 oz. salmon filets

1 c. white wine or vermouth

CRUST

6 T. butter at room temperature, room temperature

1/2 c. grated white horseradish (squeezed dry)

1 T. sesame seeds

1 T. garlic powder

1 t. salt

1/4-1/2 t. fresh, grated ginger

1/4-1/2 t. wasabi powder

1/4-1/2 t. dijon mustard

1/2 c. gluten free rice crackers, ground coarsely into crumbs in a food processor (Diamond Almond Rice Crackers are recommended)

2 T. fresh lemon juice

Preparation

Preheat oven to 400 degrees.

  1. Combine crust ingredients in a food processor and pulse until mixture forms a ball.
  2. Line a baking sheet with aluminum foil and spray with non-stick spray. Place fish on the baking sheet, and pour wine over fish. Lightly salt filets.
  3. Using fingers, spread crust mixture thickly over filets.
  4. Bake at 400 degrees for 13-18 minutes depending on thickness.
  5. Turn on broiler. Broil for 2-4 minutes or until crust is golden brown
