Ingredients
Four 6 oz. salmon filets
1 c. white wine or vermouth
CRUST
6 T. butter at room temperature, room temperature
1/2 c. grated white horseradish (squeezed dry)
1 T. sesame seeds
1 T. garlic powder
1 t. salt
1/4-1/2 t. fresh, grated ginger
1/4-1/2 t. wasabi powder
1/4-1/2 t. dijon mustard
1/2 c. gluten free rice crackers, ground coarsely into crumbs in a food processor (Diamond Almond Rice Crackers are recommended)
2 T. fresh lemon juice
Preparation
Preheat oven to 400 degrees.
- Combine crust ingredients in a food processor and pulse until mixture forms a ball.
- Line a baking sheet with aluminum foil and spray with non-stick spray. Place fish on the baking sheet, and pour wine over fish. Lightly salt filets.
- Using fingers, spread crust mixture thickly over filets.
- Bake at 400 degrees for 13-18 minutes depending on thickness.
- Turn on broiler. Broil for 2-4 minutes or until crust is golden brown
