Ingredients

1 and 1/4 cups of whole-bran cereal (such as All-Bran)

1/3 cup boiling water

3/4 cup of all purpose flour

3 Tbs whole-wheat flour

1/3 cups sugar

1 tsp baking soda

1/4 tsp salt

3/4 cup of butter milk (I just add some lemon juice to my milk)

1 egg, lightly beaten

3 Tbs honey

3 Tbs oil (canola or one of choice)

1 to 1 and 1/4 cup of blueberies

Preparation

  1. Preheat oven to 425 degrees. Spray muffin pan (12) or line with baking cups, set aside.
  2. Place cereal in a bowl. Pour boiling water over it. Stir until moisten; set aside. In a medium bowl, whisk flours, sugar, baking soda, and salt; set aside. Stir buttermilk, egg, honey, and oil into bran-mixture. Add flour mixture. Gently stir in blueberries.
  3. Divide batter among muffin cups and bake until tops are springy and a toothpick inserted in center comes out clean, 12 min. Cool in muffin tin for a few minutes before moving to wire rack to cool completely.
