Ingredients
Filling:
1/2 cup sugar
2 tbs. cornstarch
Pinch cinnamon
Pinch salt
6 cups blueberries, washed
1 1/2 tsp. grated lemon zest and 1 tbs. lemon juice
Topping:
1 cup flour
2 tbs. cornmeal
1/4 cup sugar
2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
4 tbs. butter
1/3 cup buttermilk
1/2 tsp. vanilla
Preparation
Preheat oven to 375 degrees. Mix filling ingredients together and put in glass casserole dish (approx 9x13). Bake on a cookie sheet for approx 25 mins.
For topping, mix together dry ingredients. Melt butter, add buttermilk and vanilla and mix together with dry ingredients. Put large spoonfuls of topping on top of cooked blueberry mix and bake at 425 degrees for 15-18 minutes.
Serve with vanilla ice cream and enjoy!
