Ingredients

For filling:

3 quarts fresh blueberries

3/4 cup sugar

2 Tablespoons lemon juice

1/4 cup cornstarch

For crumble:

2 cups old-fashioned oats

1 cup chopped raw pecans

1 cup almond meal

1/2 cup olive oil

1/2 cup pure maple syrup

1/2 teaspoon salt

Preparation

Mix blueberries, sugar, lemon juice and cornstarch and pour into a baking dish (9x9 or 10x10).

Mix oats, pecans, almond meal, olive oil, maple syrup, and salt in a bowl. Toss to combine. Distribute evenly over blueberries.

Bake in a preheated 350 degree oven for 35 to 40 minutes, longer if the berries are frozen. Top with vanilla yogurt, whipped cream, or ice cream.
