Ingredients

2 lbs skinless, boneless chicken breasts

2 bunches green onions, chopped

1 TBS minced ginger

1 TBS minced garlic

1/2 TBS red pepper oil

1/2 TBS salt

4 TBS sesame seed paste, Asian*

4 TBS soy sauce

1-1/2 TBS brown vinegar*

4 TBS brown sugar

2 TBS sesame oil

*found in Asian market

Preparation

Boil the chicken for 20 minutes or until done. Shred the chicken. Can be done in Kitchen Aid Mixer with paddle attachment while warm in a few minutes. Mix all other ingredients together except the green onions. Pour the sauce over the chicken and combine with the green onions. Serve in a bowl or on a platter at room temperature with lettuce leaves to be eaten as lettuce wrap filling or as Asian chicken salad.
