Ingredients
1 1/4 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup sugar
1 1/2 cups All-Bran® Cereal
1 1/4 cups milk
1 each egg
1/4 cup vegetable oil
1/2 cup raisins, if desired
Preparation
Grease muffin cups well. Preheat oven ton 400* F.
Stir together flour, baking powder, salt and sugar. Set aside.
Measure cereal and milk into large mixing bowl. Stir to combine. Let stand 1 to 2 minutes or until cereal is softened. Add egg and oil. Beat well.
Add flour mixture and raisins, if desired, stirring only until combined. Spoon into muffin cups.
Bake at 400*F for 18-20 minutes or until pick inserted in center comes out quickly.
