Ingredients

1 1/4 cups flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup sugar

1 1/2 cups All-Bran® Cereal

1 1/4 cups milk

1 each egg

1/4 cup vegetable oil

1/2 cup raisins, if desired

Preparation

  1. Grease muffin cups well. Preheat oven ton 400* F.

  2. Stir together flour, baking powder, salt and sugar. Set aside.

  3. Measure cereal and milk into large mixing bowl. Stir to combine. Let stand 1 to 2 minutes or until cereal is softened. Add egg and oil. Beat well.

  4. Add flour mixture and raisins, if desired, stirring only until combined. Spoon into muffin cups.

  5. Bake at 400*F for 18-20 minutes or until pick inserted in center comes out quickly.
