Ingredients

1 - 2 leeks, cleaned, chopped

4 tbs butter

goat cheese - ~ 4 oz, finely chopped

3 eggs

2 C milk

2 C yogurt

~ 6 C bread, cut into 3/4" cubes

Preparation

Heat oven to med and place bread in casserole dish to toast.

While bread toasts, cook leeks in butter until tender.

Mix eggs, milk, yogurt well. Toss bread with cheese bits, then pour milk over to submerge bread. add leek mixture and let rest 5-10 minutes to absorb milk.

Bake at 350 or so until puffed and beginning to brown. Serve immediately.
