Ingredients

100 g bread, one day old

50 g Parmesan cheese, grated

3 eggs

¼ tsp black pepper

Pinch of nutmeg, grated

1500 ml vegetable stock from 1 cube

Fresh parsley leaves, chopped, for garnish

Preparation

  1. Cut the bread into cubes and grind into coarse breadcrumbs in a food processor.
  2. Add Parmesan cheese, eggs, black pepper and nutmeg, mix and combine.
  3. Bring the vegetable stock to the boil, remove from the heat and gradually whisk in the egg mixture.
  4. Return to the heat and simmer (without boiling), stirring occasionally, for 7-8 minutes. Serve garnished with chopped parsley.
