Ingredients
100 g bread, one day old
50 g Parmesan cheese, grated
3 eggs
¼ tsp black pepper
Pinch of nutmeg, grated
1500 ml vegetable stock from 1 cube
Fresh parsley leaves, chopped, for garnish
Preparation
- Cut the bread into cubes and grind into coarse breadcrumbs in a food processor.
- Add Parmesan cheese, eggs, black pepper and nutmeg, mix and combine.
- Bring the vegetable stock to the boil, remove from the heat and gradually whisk in the egg mixture.
- Return to the heat and simmer (without boiling), stirring occasionally, for 7-8 minutes. Serve garnished with chopped parsley.
