Ingredients
3-4 lb. frying chicken (cut in serving pieces)
4 medium potatoes (quartered)
1 medium sliced onion
1/2 cup bread crumbs
1T. minced parsley
1T. oregano
4T. grated parmesan cheese
2 cloves garlic, minced
1/4 c. water mixed with 1/4 c. olive oil
Preparation
Salt and pepper each piece to taste. Place chicken and potatoes single layer in a baking dish. Mix bread crumbs, onions, parsley, oregano, garlic and cheese and spread over chicken. Spoon combined water and oil mixture over chicken. Sprinkle with paprika, if desired. Bake uncovered at 350 degrees for 1 1/2 hours.
