Ingredients

4 lbs broccoli rabe (or baby broccoli), thick stems removed

1/3 cup olive oil

4 garlic cloves, thinly sliced

1 tsp crushed red pepper

3/4 cup ricotta salata, crumbled

Salt & pepper

Preparation

  1. Bring a large pot of salted water to a boil. Add the broccoli rabe & cook until just tender but still bright green, about 3 minutes. Drain & coarsely chop.

  2. In a large, deep skillet, heat the oil. Add the garlic & red pepper & cook over low heat until the garlic is golden, about 3 minutes.

  3. Add the broccoli rabe & cook over moderately high heat, stirring until hot, about 4 minutes.

  4. Season with salt & pepper & sprinkle with crumbled ricotta salata.
