Ingredients
1 bunch of broccoli
3 cups chicken stock
1 onion
2 potatoes
1 tbls butter or oil
Salt & pepper to taste
Preparation
cut broccoli cutup, you can include the stem at least 3 quarters down (the bottom might be dry) Sauté onion in butter (oil) till wilted over medium heat Add the cut up broccoli and potatoes Stir a little and leave for 5 minutes after adding salt and pepper Add the stock and bring to a boil. Reduce heat to medium Simmer until broccoli and potatoes are soft about 30 to 40 minutes Blend and let cool. Refrigerate Soup might be thick, you can loosen by adding 1 cup water when reheating. If soup is too watery you can boil a potato (chopped is faster) and add to the soup.
