Ingredients

3/4 cup water

1/2 teaspoon chicken bouillon granules

2 cloves garlic, minced

3/4 cup instant brown rice, uncooked

Vegetable cooking spray

1 cup frozen French-style green beans, thawed and drained

1 cup sliced fresh mushrooms

1/2 cup diced sweet red pepper

2 Tablespoons grated Parmesan cheese

Preparation

  1. Combine first 3 ingredients in a medium saucepan; bring to a boil. Stir in rice in rice; cover, reduce heat, and simmer 5 minutes. Remove from heat, and let stand 5 minutes or until liquid is absorbed. Set aside, and keep warm.

  2. Coat a large skillet with cooking spray; place over medium heat until hot. Add green beans; saute 2 minutes. Add mushrooms and red pepper; saute 3 minutes or until pepper is crisp-tender.

  3. Add green bean mixture and Parmesan cheese to rice mixture; toss well.
