Ingredients
2 cups all-purpose flour
1 tsp ground cinnamon
1/2 tsp sea salt
1 cup unsalted butter, room temperature
1/2 vanilla bean, split and seeds scraped
1/2 cup packed brown sugar
icing sugar, for dusting
Preparation
In a small bowl, stir flour with cinnamon and salt. In a large bowl, using electric mixer, beat butter until smooth, then beat in vanilla. Beat in sugar until well mixed. Gradually beat in flour mixture until just blended.
Divide dough into 2 balls; flatten each slightly into 2 disks, wrap and refrigerate for 30 minutes (or up to 1 week) before rolling.
Place each disk between 2 sheets of parchment dusted with flour. Roll dough to 1/4 inch thick, then cut into shapes. Place on baking sheet lined with parchment. Bake in preheated 300 F oven until light golden color, 10-15 minutes. Cool, dust with icing sugar.
