1 pound buffalo meat

3/4 cup cooked quinoa

1/3 cup finely chopped onion

2 tablespoons ketchup

1 tablespoon dijon mustard

2 tablespoons chopped garlic

1 tablespoon tamari

1/3 cup fresh, chopped parsley

1/2 teaspoon ground black pepper

1/2 teaspoon fine sea salt

1/4 teaspoon dried oregano

1/4 teaspoon dried thyme

1 egg

Preparation

mix all ingredients - roll into balls (about 12). Cook at 450 degrees for 15 minutes.
