Ingredients

2 lbs Beef for stew cut in cubes

1 Large Tomato (ripe) choped

1/2 Large sweet onion minced

2 eggs

3 tablespoons Canola Oil

Salt to taste

Preparation

Put meat in a medium size pot add water to cover meat. Do not cover pot with lid. Add 1/4 teaspoon salt and bring meat and water to a boil medium high on stove top. Reduce heat and simmer for about 30 min. Drain Water let the meat cool slightly –

set Blender to chop setting Gradually add cubes of meat to Blender ( 3 or 4 cubes at a time then) transfer blended meat into a bowl before adding new bach of meat Cubes. ( Do not over blend you wand shreded texture not powder.)

Put: Oil, Onions, and Tomatoes in a pot and Sautee at medium temperature on stove top ad salt to taste. When onions are translucent and mixture has a sauce consistency, add 2 Whipped Eggs Stir Constantly for about 3-4 minutes Add Shreded meat Stir to mix well So meat gets all the flavor from Egg mixture (about 5 min)

Serve over Rice: Goes well with the Colombian Colesaw and Tostones
