Ingredients

Cream together 1 C sugar with 1/3 C butter.

Add 2 eggs (I use Safeway’s “Better than Eggs” ( 0 cholesterol) and 1/3 C water. Blend well; set aside.

Sift together 1 2/3 C flour, 1 tsp. soda, 1/2 tsp. salt, 1/4 tsp. baking powder

Add gradually to above mixture, blending thoroughly.

Preparation

Fold in 1 1/2 C mashed ripe banana and approx. 1 1/2 C broken or chopped walnuts (adjust amount & texture according to your preference.)

Spoon into lined or greased muffin pan cups and bake @ 350 for about 15 min., until toothpick comes out clean.
